Pork Posole
serves 4
Ingredients
- 1 1/2 lbs pork
- 1 t ground cumin
- 1/2 t ground allspice
- 1 ea large onion
- 2 cl garlic, fine chop
- 2 ea jalapenos, seeded, fine chop
- 10 ea tomatillos, coarse chop
- 3 C chicken broth
- 15 oz garbanzo beans, drained
- 1/3 C cilantro, chopped
- 1/2 ea lime, juice
Instructions
- Season the pork with salt, pepper, cumin and allspice, then saute until brown. Stir in the onion, garlic, and jalapeno.
- Add the tomatillos and cook for until tender. Add the broth and beans and heat through. Stir in the cilantro and remove from heat.
- Plate, garnish with lime juice, and serve.
